Crunchy biscuits

Some words: There are many times a day that we would really like a snack and everything 

has finished. Why bother? Just make these tasty crunchy biscuits for you and your family.

For your coffee or tea in the morning, to give to your kinds at school, to take with you

at your office. You will really love them. This is a recipe so easy that even a beginer

can make without any difficulty.

Ingredients:

250 gr butter or margarine

125 gr sugar

400 gr flower (all purpose)

3 tbsp baking powder

1 tbsp cinnamon

1 tbsp vanilla

1 lemon or orange zest

20 gr water (if you need it)

Execution:

1. In a mixing bowl we put the butter and the sugar  and beat well with your hand mixer.

Untill the butter is white and fluffy that means for about 15 minutes. Add the baking powder

the cinnamon, the vanilla and the zest and mix for a few more minutes. Then you add

the flower and you mix with your hands until you have a very soft pastry. 

2. Cover the mixing bowl and leave the pastry in the fridge for 15 minutes. Then you

roll out on a lightly floured surface, then stamp out biscuits using a heartshaped cutter.

Keep re-rolling the trimmings until all the dough is used. Carefully transfer the biscuits to baking

trays lined with parchment and bake in a preheated oven in 160 degrees C

for just 8-10 mins until just pale golden.

Secrets of success:

You add the water only in case you fell that the pastry needs it. The pastry is ready when it does

not stick at the sides of the bowl and of course at the bottom. Be carefful to decide if it needs 

something more after you knead for at least 15 minutes.
