Some words:
They discribe eggplant as a fruit, people considered at the begining that eggplant was a poisonous fruit, Even now if we do not prepare correctly eggplant has a really bitter taste. But is delicious and really good for health and we can make nice starters or main dishes with eggplants or even as a salad. Lets see one of the ways we greeks it them.
Ingredients:
2 large or 3 medium eggplant (about 2 pounds),
sliced into 1.2 inch-thick rounds
salt to taste
1/2 or 2/3 cup olive oil
8 to 10 garlic cloves,peeled and crushed
4 to 5 large tomatoes, grated
black pepper, some parsley
3 tbsp red wine vinegar
1 tsp sugar (optional)
Execution:
1.Place the pieces of eggplant into a bowl full of water and 3 tbsp salt. Heat in a frying pan 1/2 cup olive oil. Take some eggplant out of the water and squize to drain them well. Dry them with kitchen paper and put them into the oil. Fry them both sides until they are lightly brown. Place them in a big plate cover with kitchen paper to drain the oil. Repeat until you finish all the pieces.
2.Preheat the oven to 200 degrees C. Put in a mixing bowl the grated tomatoes the crushed garlic clove, salt, pepper. the vinegar and the sugar. Mix well. Cut some parsley and add it to your mixture.
3.Lightly oil a baking pan or a ceramic baking dish. Place the eggplant slices in layers in the dish amd pour a little of the sauce over each layer. Reserve a bit of sauce for the top. Bake until the eggplant is tender and the sauce thick, 40 to 45 minutes. Serves 4 to 6 and serve it hot, warm or at room temperature.
Secrets of success:
Never forget to put the slices into the salty water and then sqize them well because we never know if our eggplant has that bitter taste. You can leave your imagination and play with that dish if you like you can spread some parmezan over every layer and at the top.
