A cool lentils salad

Some words:

Lentils is a very healthy and tasty legume. There three varieties of lentils and they come

in three different colours as you see. It grows almost everywhere in Greece and it has

great nutrition value in iron,phosphorus,carbohydrates,proteins and vitamin B so they are 

very healthy for grown ups but especially for kids. During winter we have lentils as a soup

but because of the heat during summer we make them a very tasty and filling cool salad.

Igredients:

250 gr lentils (any colour)

2 small peppers (1 green 1 red, cut in cubes)

6-7 cherry tomatoes (cut in half)

3 garlic cloves (chopped)

3 tbsp of white wine vinegar

1/2 cup olive oil

salt pepper

1 slice of white cheese (greek feta if you can find)

1 tbsp sugar

some oregano and some mint

1 bay leaf

Execution:

1. We wash the lentils well and we put them in deep small saucepan with water

enough to cover them and a bit more. Add the bay leaf , the garlic , the onion and some oregano

and bring to boil. We reduce the heat to medium and cover it and cook until

lentils are soft but not mushed. 

2. Drain the lentils and put them in a mixing bowl. add the pepers and in your multi or blender put the oil,

the vinegar, some  mint, salt pepper and mix well to tasty sauce. Pour the sauce into the mixing bowl, mix well

to go everywhere, cover with cling film and put in the frige. Leave it at least for an hour. Before you serve

add the cherry tomatoes and pieces of feta (or white cheese).

Secrets of success:

If you add the sauce when lentils are still hot it is better because it is better absorbed so the taste is really

cool and full of flavors.
