Navy bean salad with rocket (arugula) and onions

Some Words:

Some times we feel hungry but we need to eat something fresh, cool, and tasty.

So a salad is the answer and this one can be considered as a main dish as well.

We can also serve it as a starter to diner tables or to serve it along with fish or 

chops.

Ingredients:

1/2 pound dried navy beans,picked over and rinsed

2 medium red onions, quartered and thiny sliced

1 garlic clove, peeled and crushed

A few olives and 1 tblsp capers, rinsed and drained

Salt and cayenne pepper to taste

1/4 cup olive oil

2 to 3 tblsp red wine vinegar or 2 tblsp balsamico

1 pound arugula, trimmed, washed, dried and

leaves torn into 2 inch pieces.

Execution:

1. Soak the beans for at least 8 hours or (even better)

overnight in water to cover. Drain. Bring the beans to a boil 

in a pot of unsalted water, reduce the heat to medium-low, and simmer, uncovered

until the beans are tender but not mushy, 40-45 minutes.

remove from the heat, drain in a colander, and rinse

immediately under cold running water.

2. Place the beans in a large serving bowl and toss with the onions, garlic, olives

capers, salt cayenne pepper, olive oil and vinegar. Let stand for an hour at room temperature

Mix in the rocket a few minutes before serving.

Secrets of success:

Never use salt while boiling the beans because it makes them hard. Do not forget 

to soak them this is necessary for them to boil quickly.
