Some words: The spinach and rice is a very tasty dish of the Greek cuisine and at the same time it has many nutrients and great nutritional value.It is easy to make and you can add carrots as well if you like, but it is not in the traditional dish.
Ingredients:
1 kg of spinach (peeled, washed and cut in big slices about 1 cm)
4 leeks (white part cut into slices)
6 spring onions (finely chopped)
1 large onion (chopped)
1/2 bunch Dill (chopped)
2 handfuls of rice (the white one that is used for soups)
5 spoonful olive oil
salt-pepper
fresh juice from 1 lemon
Execution:
1) Add in a skillet the olive oil and saute onions, fresh and dried along with the leeks.
2) Once softened, add the spinach, stir and cover to wither. The spinach will pull out water so we do not add, until later.
3) Once the spinach wilt, add the dill, the rice, 1 cup of tea, water and salt and pepper (as you like it)
4) Boil, stirring frequently to prevent sticking the rice. Remove the food from the fire, when the rice is ready, and drizzle with the lemon juice
5) Stir again well for the lemon juice to be absorbed and serve after 20 minutes with fresh bread and feta or any kind of cheese you like
